Try http://www.historyarms.com/rsight_38_40.html for MP40 rearsights and various other parts. I've bought parts from them in the past and found them great to deal with.
www.modelguncollector.co.uk did have complete MGC68 Zinc bolts for sale, it would be worth an e-mail enquiry to see if he still has any.
It may be easier and less expensive to buy a complete, real UZI folding stock. Try:-
